I have cooked for family and friends for as long as I can remember, and paying guests in the last year.
I love to create delicious dishes, often inspired by something that I have seen or tasted, and sitting back and watching people enjoy them!
A superb evening. With a warm welcome, and chilled aperitif, we started with a delicious cold antipasti. The aubergine married well with the soft bitterness of the endive, and the bite of parmesan. The rich sweetness of the peppers were a perfect complement.
The al dente bite of pasta complemented the warm sweetness of the squash and ricotta, with fresh herbs and the crunch of pine nuts. The earthiness of the second course a contrast to the freshness of the first.
A perfectly roast chicken course with an asparagus centre was delicious, complemented again by the deep notes of roast potatoes, salt, rosemary and garlic.
The swirl of cream, the simple richness of the fruit, the bite and warmth of biscuit, and a tinge of amerreto ended a balanced but brilliant meal.
We had a lovely evening.
